Blue Marble has released a fermentation pathway that uses food production side stream materials (waste) to cultivate cellulose-producing bacteria. This approach allows for the production of cost competitive cellulose materials for label friendly bulking and texturing solutions. Microbial cellulose is produced without hemicellulose or lignin contamination, making this cellulose superior to existing bulking agents. It can also be used as a calorie reduction compound with benefits including better GI tolerance than other calorie-reducers such as insulin or sugar alcohols.
